Dr. Rau's Maple-Pecan Cookies Recipe

My cookies!... I ate some....

The other day my friend Stacey offered me some of this delicious, guilt free, cookies. They are from "Dr. Thomas Rau's Diet for the Whole Body Healing book".
Today I decided to try and make some. They are SO delicious, and so easy to make!
Here is the recipe, ENJOY it!

"For some people, spelt is more digestible than other wheats, and it contains more protein and fiber. Most importantly, it is rich in carbohydrates called mucopolysaccharides, which stimulate the immune system. All that aside, these are delicious - and somewhat elegant - cookies."


1 Cup of spelt flour
1 Cup pecan halves
1/2 teaspoon baking soda
1/2 Fine sea salt
2 tablespoons unsalted butter, at room temp.
1/4 Cup maple syrup
1 teaspoon Vanilla extract
2 tablespoons sunflower oil

Preheat the oven to 350°F. In a food processor ( If you have a good blender , you can use that too) combine the flour, pecans, baking soda and sea salt. Pulse until pecans are finely chopped.

In a large bowl, beat together the butter and maple syrup with a wooden spoon until light and well blended. Beat in the vanilla, then add the oil in a slow stream, beating well. Add the dry ingredients and stir with the wooden spoon until blended. Drop the dough by rounded teaspoons onto a buttered cookie sheet.

Bake for 12 minutes, or until the cookies are just beginning to brown around the edges. Transfer to a wire rack and let cool before eating.

  3. Thanks, I couldn't find my Dr. Rau book, and wanted to make these tonight, now I can thanks to this post. I have made these numerous times over the last few years, they never disappoint. They are great for the holidays too!
